What is your favorite recipe at the moment?
recipe: healthy vegan apple-almond-pancakes
(slightly adapted from this recipe)
for one serving you’ll need:
- 1/3 cup whole-grain flour (i used whole-spelt)
- 1/3 cup non-dairy milk
- 1 tsp. oil (I guess you could also omit this)
- 1 tsp. baking powder
- a pinch of salt
- a pinch of cinnamon
- 1 tsp agave nectar (or more, just sweeten to your liking)
- 1/2 chopped apple
- 2 tbsp. chopped almonds
Mix everything in a bowl and bake pancakes in a non-stick pan. Serve with fresh apples and chopped almonds and drizzled with agave nectar !
Healthy Berry Ice cream (88 cal per serving and fat free)
Ingredients:
- 2 bananas
- 1.5 cup frozen berries (or fresh!)
- 2.5 cup spinach
- 1.5 cup plain greek yogurt
- 1 tsp agave or honey (optional)
Method:
- Blend all ingredients together
- Put in ice cream maker until firm
- Eat it then or freeze it for later!
This recipe makes 6 servings (I ate one before I pictured it) of delicious ice cream! You don’t taste the spinach at all, and it’s totally adaptable to whatever berries you want to use. Each serving is only 88 calories, 0 g of fat, 6 g of protein, and 10 g of sugar (from fruit!)
You may regret many things in your life, but I can guarantee there are two things you’ll never regret - making these cupcakes, and eating the entire batch by yourself. Do you like light, fluffy cupcakes when you pick them up that magically transform in to a gooey, decadent heaven in your mouth…
Healthy Cinnamon Roasted Almonds
Ingredients:
- 1 egg white
- 1 teaspoon vanilla extract
- 4 cups whole raw almonds
- 1/2 cup Sugar or Stevia zero calorie sweetener (for even lower sugar)
- 1/2 cup light brown sugar
- 1/2 teaspoon salt
- 3 teaspoons ground cinnamon
Directions:
- Preheat oven to 250 degrees F. Line a 10×15 inch jellyroll pan with parchment paper.
- In a medium bowl beat the egg white and vanilla until frothy but not stiff. Add the nuts, and stir until well coated. Mix the Sugar or Stevia, brown sugar, salt and cinnamon into the nut mixture. Toss to coat. Spread evenly on the prepared pan.
- Bake in preheated oven for 1 hour and 15 minutes, stirring occasionally, until golden. Allow to cool. Store nuts in airtight containers.

Homemade almond butter! (saw this earlier on another post and made my own almond butter)
- 2 cups of almonds
- teaspoon of salt
Preheat oven to 350 degrees, put almonds on baking sheet thing, leave in the oven for 5-10 mins, put in blender, blend and yeahhh

Fruit Popsicles
Step 1: Pick your favorite fruit, note these will be frozen so best to stick with things without big seeds and such. some choices
-strawberries (diced)
-Banana (diced)
-Raspberries
-Blackberries
-Green or red Grapes
-kiwi
-mango
-pineapple
-apple
Step 2: Pick a juice, puree, or even water
- for mine I used the crystal light strawberry kiwi water
heres some more suggestions
-water
-watermelon puree
-lemonade
-limeade
-pomergrante juice
-puree made by blending any type of fruit
-orange juice
-cranberry juice (i recommend watering it down a bit)
-apple juice
so on and so on.
it is better to stick with lemonade or low calorie liquids so the Popsicle remain healthy
step 3: pour in a container and put in a Popsicle stick
step 4: freeze for 3 to 4 hours

homemade energy bars. blended dates + pulsed mixed nuts = delicious, surprisingly a very close taste to snickers …or, maybe i’m imagining it lol i haven’t eaten an actual snickers in years

SOMETHING ELSE THAT IS GOOD
GUACAMOLE WITH CARROT STICKS
~150calmash up 1/2 an avocado with 1 chopped tomato, a squeeze of lemon juice, salt and pepper and dip carrot sticks into it.

1) Pick a couple of ripe bananas. They should be sweet and soft but not too mushy.
2) Peel the bananas and cut them into coins
3) Freeze the banana pieces for at least an hour or two.
4) Put the pieces into a food processor or blender.
5) Blend on high. Initially they will look crumbly and piecemeal. The mixture will probably get stuck a lot. Keep scraping down the bowl. Suddenly, as you keep blending, you will see a change.
6) The bananas turn creamy!
7) (Optional) Now is the time to add a scoop of peanut butter, honey, or anything else you care to mix in.
8) The ice cream will be the texture of soft-serve, but if you freeze again in an airtight container, it will get harder and more like regular ice cream.
